My Passion

My passion for cooking has been a constant in my life, and it has grown into a deep fascination with the scientific aspects of it. The ability to understand the chemical reactions that occur during cooking and how even the slightest alterations can be completely change flavors and textures. I find great joy in experimenting with ingredients, techniques, and equipment and my in depth journey began when I moved to Russia.

In my spare time, I forget about the world and immerse myself in various food projects that allow me to explore this passion further. Whether it’s developing new recipes, researching innovative cooking methods, or studying the latest advancements in food science, I am always eager to expand my knowledge and skills in the culinary world.  I have attended several seminars and completed the online course “Science & Cooking: From Haute Cuisine to Soft Matter Science which completely changed everything for me.

Among my culinary pursuits, charcuterie and cheese-making hold a special place in my heart and are 2 things that really bring out my passion. The art of curing and preserving meats, crafting flavorful sausages, and creating exquisite cheeses has become a true passion of mine and allows me to express my artistic side. I have dedicated significant time to mastering these crafts, attending workshops, and even holding masterclasses to share my expertise with others.  Just line anything else, the more you learn and the more you understand just how little you know which makes you push yourself to study and try new things.

In summary, my passion for cooking, particularly the application of science in the kitchen, drives me to continually seek out new challenges and expand my culinary repertoire and meet some of the most interesting people, along the way.
